A Wonderful Broccoli & Cheese Casserole

Baked Broccoli & Cheese (Adapted from “Anitalianinmykitchen.com”)

(Time:  Approximately 1 hour, 5 minutes; Serves 10)

Ingredients
2 heads Broccoli
4 Tbs. Butter
4 Tbs. Flour
2 Tsps. Kosher Salt
3 Cups Milk
2 Lbs. Extra Sharp Cheddar Cheese


Directions
Preheat oven to 325° F.

Lightly grease or butter a large baking dish (at least 10 x 7 inches; 9 x 12 inches is fine).

Cut up broccoli into florets.

Boil broccoli for 6 minutes (I prefer it less well cooked), drain, shock with cold water, and drain again, (pat dry with paper towel).

Coarsely grate cheese and set aside.

In a large pot over low heat, melt butter, and whisk in flour and salt until it’s blended and smooth.

Slowly add milk and continue whisking until thickened and smooth and starting to bubble.

Let slow-boil 1-2 minutes, then remove from heat.

Fold in cheese and broccoli and combine gently until cheese starts to melt.

Add eggs, and continue to stir to combine.

Pour into prepared baking dish and bake for approximately 30-45 minutes.

Remove from oven and let sit 5 minutes before serving.

* You can use Broccoli, Romanesco, or Cauliflower
